The Messy Cheffy
Vegan French toast.
French toast is the perfect weekend brunch treat. This recipe is super easy with little or no effort required.
3 slices of sour dough bread
100 ml plant milk of your choice I use almond.
1 teaspoon maple syrup
pinch of cinnamon
A few drops of vanilla.
2 table spoons coconut oil
Set the bread aside. Place all the remaining ingredients into a blender and blitz until smooth. The mixture should be of smoothie consistency. Transfer the mixture into a wide bowl.
Prepare the bread by slicing into medium thickness slices. Place the bread into the mixture ensuring to cover both sides in the French toast mix.
Heat a large frying pan on medium heat with non fragrant oil ( olive oil Is not suitable for this dish as its too fragrant) I used coconut oil. As soon as the oil is hot pace the bread into the pan. Cook the bread on either side until golden brown.
Best served with some delicious carmelized banana, blueberry compote and a good dollop of coconut yogurt.
