Smokey lentil baked eggs.

Meatless Monday they are calling it now!

Looking for a simple, cheap, MEATLESS Monday dish?

‘’No worries” as they say here in kiwi land. I have got you covered.

All you need is.


1 white onion diced.

1 cup of potatoes, peeled washed and diced.

½ cup eggplant, diced (medium sized eggplant)

1 teaspoon harissa paste.

1 teaspoon smoked paprika.

2/3 cloves of garlic crushed

1 can of tomatoes

1 can of lentils (drained & rinsed)

¼ cup feta

4 eggs.


First prepare all your vegetables.

Wash, peel and chop potatoes into small cubes roughly all around the same size to ensure they cook at the same time.

Peel and dice the onion.

Dice the eggplant the same size cubes as the potatoes.

Crush your garlic.

Drain the lentils and rinses (place the lentils in a sieve and run running water over them. Shake off excess water.

Open the tin of tomatoes.

Now you’re ready!

Heat the frying pan (preferably a deep frying pan suitable for the oven)

Add two table spoons of olive oil to the pan( allow the oil to heat before adding the potatoes, if you add the potatoes before the pan is hot enough they will absorb too much oil. The potatoes take the longest to cook. Sautee the potato for 6-8minutes. Ensuring to keep stirring the potatoes often using a wooden spoon. After 6-8 minutes, add the onions, garlic and eggplant to the pan with the potatoes. Ensuring you are stirring the mix often.

When the potatoes are soft but don’t fall apart it’s time to add the harissa paste & smoked paprika.

Allow this to cook out for 2 minutes.

Now add the tin of tomatoes & lentils.

Allow this to cook out for 3-4 minutes. Don’t forget to keep stirring. Taste it now add salt & pepper. Whatever amount you desire.

Now turn off the heat.

Turn on the grill to 160 degrees.

Using the back of a wooden spoon flatten the mix in a frying pan.

Sprinkle half the feta cheese on top of the lentil ,tomato, eggplant & potato mix.

When the mix is flat and even, crack four eggs one by one on top of the mix.

Place the frying pan under the grill until the eggs are cooked (yokes should be still runny but the whites should not be brown.( you will need to keep a close on your dish here)

To finish sprinkle the remaining feta cheese on top a sprinkle of black pepper and serve.

Remember the frying pan has been in the oven so the handle will be hot… and whatever you do don’t put the hot pan directly on the table… mammy won’t be happy.

I like to serve this dish with some nice crusty bread.
